I use this as a finishing sauce on my pulled pork, it's great.

New to the forum

I've always done fat side up. I usually score the fat down to the meat so it looks like a bunch of cubes on top. This way the mop and rub can get down into the meat, but the fat will still render down a little and help keep the meat moist. I use a mixture of apple juice, pineapple juice and apple cider vinegar mixed with my rub as a mop and mop every hour. Haven't had a bad butt yet!
