Wings Drumbie Bourbon Glazed ñ Dipping Sauce

30 pieces

2 T. butter or ¼ stick
1 c. onion chopped
3 garlic cloves peel sliced thin
1 c. bourbon divided
1 c. catsup
½ c. hot sauce ur fav or more
¼ c. tomato paste
3 T. brown sugar light packed

3 lbs. wings or dumbies or both

Melt butter in pot add onion –sauté till tender do not burn add garlic –sauté –add 3/4 c. bourbon stir –boil till liquid almost gone –about 7 minutes or –add rest or ¼ bourbon whisking the catsup ñ the rest EXCEPT wings bringing to boil ñ reduce to simmer–stir till slightly thick –about 10 minutes. Season with salt ñ pepper to ur taste-remove from heat ñ cool.

Place chicken in 15x10x2 in. glass baking dish. Pour above sauce over chicken ñ coat all well –cover refrigerate over night.

Preheat oven 375 ° F
Place wings or drumbies on racks covering baking pans with foil or parchment paper. Space chicken so not touching each other. Pour last of sauce over chicken pieces. Season again with little salt-pepper ñ garlic granular if u choose to. Bake about 45 minutes till ur way of doneness. Remove to platter serve with dipping sauce below.

~Blue Cheese Dipping Sauce 2 ½ cups

8 ozs. or 2 c. Blue Cheese crumbled fine
1) 16 oz. sour cream container
½ c. parsley or chives chopped or cilantros
Salt-pepper ñ garlic granular

Medium bowl- whisk all together well. Season as u like. Chill well
This can be made day ahead.
