Brought roasted garlic butter chicken this week end - I came up with this recipe along with the chicken ball wobbles I came up with this to go with them. The sweet cubes of Mexican squash added to the chicken made these excellent tasting. Hj
Butter a little ñ olive oil for skillet
1 Mexican casaba squash peeled cubed or sliced
1 Italian squash peeled cubed or sliced
cooked chicken or turkey shredded
1½ T. chili powder or more
2 T. cumin powder
Little cayenne pepper (optional or use Green chile seasonings YUM
Salt to taste
Tortilla’s
Using large skillet –medium heat -add little butter with olive oil.
Add both squashes ñ cook till about 5 minutes –stir often.
Add chicken or turkey seasoned with chili ñ cumin powder*
Stir ñ mix well with squashes adding salt if needed.
Heat or steam tortilla’s –place skillet mixings in tortilla’s or just eat them as usual. Nice side dish for this is tomatoes ñ cucumbers in olive oil ñ vinegar with little sugar ñ seasoned with garlic –salt ñ pepper or coleslaw.
Notes~* Best to fix the chicken or turkey with chili n cumin powder-gr. chile seasonings ñ little cayenne pepper an hour before ñ cover –sitting in refrigerator for flavors to meld into poultry.
(good without the green chili seasoning also. Monterey seasoning good also. Just cover the seasoned shredded poultry ñ set in refrigerator for all the flavors to meld.
Toppings with roasted or mix in green chilies - adding shredded cheddar cheese- lettuce or what ever tickles UR fancy..
