BBQ Pit Boys Chicken Thighs

Just enjoying the A/C today. Too hot and muggy out to work on my trailer. Was tired anyway. I had to run my karaoke system last night at a bar. Didn't get home til 4 a.m.

I hit WM on the way home, cause I was out of dog food and hopefully wouldn't cook any today. :shock: Always check the mark down area for meats at that time of day. I ran across a 4# pack of thighs for $1.27, cook or freeze by tomorrow.

Yeah, I bought 'em. There was 8 in the pack and all looked about the same size. 1/2# thigh? :shock: Looks like some good eatin' to me.

Here's the video and recipe

Fired up the 18.5 WSM and the Smokey Joe.
Did the prep work as directed. BBQ sauce under the skin before cooking? Oh well, I'll try it. (Thinking more dog food now). Rubbed with EVOO. Sprinkled Lemon Pepper and Cajun Seasoning on them.

I kinda got carried away on the sear. :oops:
On the WSM, lump and hickory @ 325-350.

Hit both sides with the sauce after 30 minutes.

Took them to 175 internal.
Was gonna set the sauce on the SJ, but I choked it down too much. So I pulled the center of the WSM off and set the grill on top of the coals.

The sauce was also from their website. Jalapeno & Beer Barbecue Sauce
Mighty tasty. Both are definitely keepers and do agains.
Peach cobbler for desert.
Now I am totally worthless.

Great cook and you can't beat the price :D . I like grabbing thighs and legs to cook for dinners during the week. Super cheap and short cook time.

Looks guood Jarhead BBQ chicken is one of those food s I can eat for Desert, Breakfast Between meal snack... Yeah Iiiii like IT!!

I watch their YouTube channel all the time. They remind me of the show, "Swamp People". :mrgreen:

That was a long 10 days. I was chief cook and part time bottle washer.

It is just funny to me how you read all the fancy new gadgets, knives, etc... (I probably have most of them myself), and these guys go after everything with an old knife that looks like a classic "Old Hickory". It is a one knife for all! LOL. They will do everything from chop onion, cut chicken, spread butter. Lots of good finds watching them.

txngent, I bought a complete set of those Old Hickory. I love them.
I can't use them in the vending trailer, HD says "No NSF stamp".
The things that we done as kids, that are unsafe now, we should all be dead.
My Mom had two of those when I grew up, the only two knives we owned. A paring knife and the butcher knife. I still have the butcher knife. It don't get used.
I've used my big butcher knife to split XL chunks for the WSM. Let me see a made in China (Ginsu) do something besides cut an aluminum can and a tomato. I can split wood and still cut and trim steaks. :shock:
Those videos are what prompted me to buy them.
Ya git what ya pay for (plus shipping and processing). Mine are made in the USA. :cheers:

Chicken look good to me, chicken is always a great choice. So is your knife. I have some fancy ones, but the old carbon ones just keep on cutting. CF :D

Thanks CF, I don't have any fancy, expensive knives, unless you want to call Sam's Club and Victorinox expensive. :D
I use the Old Hickory at the house and they are well used.
