Yeppers nearly ghaurantee that be a nice way to handle them dove birds. Used to hunt out on the Waggoner Ranch and the co-owner of the place made a variant. Not near as elaborate and his wife par boiled and deboned the breastes beforehand. He would just wrap up the hunks in the bacon slather with sauce and cook em on the grill. Know it aint the purist way to go and wouldnt hold a candle to your recipe..but have seen drunk grown men fighting over who get the last one:)

You can debone the breast and do the same thing. Problem is the cook eats most of them before they are really done. :)

I just shoot em in the haid with a .22...shotguns are cheating. Remember well the hardest whupping I ever got back when I was young skull full of mush. My daddy sent me out with 2 rocks and I only come back with one squirrel for supper. Whupped me with a wet cotton rope and put salt and merthiolate on the wounds. Taught me a lesson on that deal.
