Stuffed chicken legs!

These are VERY labor intensive, but sure to please! Basically, you start by removing the skin from the leg. Be careful though, as you can see, you'll be using it again! After this is done, then bone the leg and set the meat to the side. Repeat steps 1-2 until your pile o' legs is done. Then you can take the meat and kinda pound it nice and flat like you would a cutlet or breast, season and/or marinate next. Then you can choose other items to stuff with it. Here, I used provalone, prosciutto, and some baby bella mushrooms. I took the leg meat, all flattened out, slapped on a slice of prosciutto, then some provalone, then a couple mushroom slices. After the layers were created, I rolled it all up nice and tight, then back in the skin they went. Took a couple tooth picks to hold the ends closed, and on the grill they went! I will do them again in the near future, and take some step by step shots to better clarify the process. These came out really well despite the work that goes into them. Cooking takes less time than the prep lol.. Anyhow, enjoy!

I can tell they are a lot of work, but look oh, so good. Nice color. Flavor layers sound great. CF :D
