Here is a slide show on the chicken that made the throw down finals.
No real recipe here but:

Brine: 1 cup sugar and 1 cup salt/gallon of water keep it cold.

Seasonings: Use your favorite, Montreal Chicken, Italian Herbs, Poultry seasonings.

Rub: I'd go with Sucklebusters or maybe DDogs or Spicewines possibly.

Stuffing: Sprig of Rosemary and 1/2 orange or lemon.

PT - thats great, I thought the coloration on those yard birds was excellent.

Great show, Tom! I loved the color, too. Wish I'd had a color like that for my birds. :(

What temps did you cook the birds at? Low? High?

Temp was about 240* wood was oak. I put the birds on fairly cool so they will condense some smoke on the outside.
