We had about 2/3 of a whole leftover chicken when I woke up Sunday. Nobody in my house will eat leftovers, so I'm tired of food going to waste. Here is my latest leftover concoction out of what we had in the pantry.
Chicken Chili.....................turned out prettty darn good for 5 minutes worth of prep time.
Shredded leftover baked chicken
1 can of garbanzo beans (aka Chick peas)
1 can of kidney beans
1 can of corn
1 can of tomatoes
1 diced onion
1 diced green bell pepper
garlic
chili powder
cumin
oregano
pepper
salt
Combine all ingredients, bring to a boil and simmer for an hour or so..... voila!
Chicken Chili...............
