Wings and fins

Postby bondobill » Sat May 06, 2017 9:24 pm

In between yard work and such I threw a bird on the pellet pusher along with a couple of small Salmon steaks.
I brined the bird in copycat Chicken soak for around 8 hours . Did a rub of SBs Clucker Dust and Texas Pecan. Finished it off with SBs Chipotle BBQ sauce

Hot dang it was good bird :D Salmon weren't bad either

I assume that chicken is spatchcocked but no assumption that the color is perfect  what flavor pellets did you use? - - - - dessert is mag worthy also  - - - - thanks for the chin drool, Wild Bill :salut:

Yep OUP.... spatchcocked it with my pruning shears. :laughing7: works like a sum of a beach.
Smokers loaded with perfect blend pellets. Mix of cherry, apple and Mesquite.
I started kinda late so I put the bird in at 275. Figured I wouldn't get much smoke at that temp so I added a cherry Mojo brick and filled a Amazin tube with cherry also.

I aint much on dessert and I don't do any baking. My missus is good in the baking dept. :D
I gotta get my mom some Rhubarb. She can do amazing things with it. Her Rhubarb rolls are to die for.

Big Bird

Thanks guys

:laughing7: :D   it sure didn't take me long to purchase some shears after my first attempt with a knife - - - when I got thru with the first knife attemp there was more wire holding it together than a Red Green Project :laughing7:

One tip I may offer here is ?if? you're going to Spatchcock it, I highly recommending getting a pair of Kitchen Shears ( large scissors) to do it with. It can be done with a knife but don't say I didn't warn ya :laughing7: :D

Beautiful colour and very inviting, puddin looks good too. We call dessert here puddin. Family word we all use. Goes back to if we see someone with a big head, we all say ....head like a boarding house puddin.lol
