4 servings
1 T. butter
2 jalapeno peppers medium seeded chopped
1/4 medium Spanish onion finely chopped
Juice of 1 large lime
Salt -pepper to taste
2 c. (1 pint sour cream
2 avocados sliced
4 hot cooked chicken breast halves (about 6 ounces each
1/2 c. tequila (use clear tequila not aged tequila
Sauce
Medium size sauce pot- melt butter. Add jalapenos with
onion. Sauté over medium high heat 2 to 3 minutes- stirring- until
vegetables are softened. DO NOT let onions brown. Reduce heat - add lime
juice- salt with pepper. Add sour cream - whisk until mixture comes to a
boil. Set aside.
Plate sliced avocado's - divide among 4 serving plates- creating a fan
shape on each plate to be used as a bed to hold the chicken. Slice hot
chicken breasts into lengthwise strips n set over avocado.
Add tequila to sour cream sauce n heat through. Use to top chicken and
avocado. Serve with rice or salad.
