Croquetas de Pollo YUM

1 chicken breast
6 ham slices about 1/4 inch or more thick

I Can't Belive It's Butter or maragine
1 T. onion chopped
3 T. flour
1 c. milk

1 T. Cilantros or parsley
1 T. mustard

1/8 c. mayo
2 eggs


bread crumbs

salt n pepper

Wash chicken breast well -boil it with salt.
Chop up chicken n ham into bite sizes.

Fry onion in I Can't Belive it's Butter-add flour- stirring constantly-when it starts to brown- add milk. Stir 10 minutes more.

Add chopped ham- chicken- mustard n cilantro-mix together. Add salt -pepper n mix well. Let cool a little to form thick paste.

Whip eggs with mayo.

Form croquettes by hand. Dip them in whipped eggs n bread
them. Fry them evenly in oil - drain on paper towels.

Notes~ for spicy ones add some cayenne pepper or chopped fine jalapenos or serrano's to the mustard n cilantro mix.
A mistake is sometimes a great creation
