Per each thigh

Thighs skinned deboned split open (lengthwise
Monterey Seasoning
Pepper Jack Cheese oblong cube
Jalapeno de-seeded split in half-no stem
1 bacon slice thick per thigh
toothpick long size wet

Preheat oven or 350 F. or Preheat grill

For each chicken thigh -debone-skin n split open so it lays long to roll
Season thigh n bacon with Monterey Seasonings or your favorite seasoning both sides
Place bacon slice down on flat surface -laying thigh opened on top bacon
Place 1/2 the jalapeno on each side of about a 2 to 3 "long x 1/2"
wide about 1/4 " thick slice Pepper Jack Cheese -place other
1/2 japeno on other side of cheese-start to roll bacon-enclosing all around thigh
Place wet toothpick through to hold together
Bake 20 to 39 minutes depending in ur oven on cookie sheets covered with foil
or grill on platter incase cheese melts out.

Note -yes u can pound a chicken breast thin n do the same as above
Want met to be extra good after grilling or baking drizzle a great cilantro-
jalapeno- cream cheese sauce or a Baja sauce over the top n drizzled
around the plate.

I have added slice of tomato n summer squash slices with
sometimes together n sometimes separate..ENJOY

:oops: Correction to recipe above ;as I was putting these together for lunch today I remembered :oops: last time I made these, the cheese ran out..DUGH That's what another year added on does to one.. I celebrated my 27 th anniversary to my 39 th Birthday this month.

Don't put the cheese inside "UNLESS" you in case the cheese in the jalapeno Unsliced in half. Cause the cheese ran out so here is what I did I place jalapeno inside seeded-destemed -with little cheddar cheese with toothpick (small piece to hold end of pepper together n last 5 minutes cooking laid a chunk of Pepper Jack Cheese on top with making the cream sauce on the side.. You can just add the jalapeno inside wrapped chicken with no cheese inside. These were so good. Made salad for friends n refried beans with bacon n little salsa mixed in the beans with garlic grandular - topped with melted cheddar cheese.

Sorry about the mistake...Using a smoker doing chicken this way- shouldn't matter. Cheese should stay pretty much in place. Can't remember been so long since using the smoker..

Get creative add any cheese u like or goodies u might enjoy..
