OK, had a craving for turkey pot pies today but the ones you get pre-made are full of peas and celery. I like those veggies but they are a no go with the Mrs. Since it was sub-zero with slippery roads I drove the Mrs to work, which means I also have to pick her up when she gets off. So I drop her off and then go to the market.
Picked up a hunk of cooked turkey breast, bag of carrots, a shallot, a small head of broccoli, a Yukon gold spud, some Gouda cheese, a can of cream of chicken soup and a box of Pepper Ridge Farms Puff Pastry puffs.
I boiled the spud then steamed the broccoli and then steamed 2 carrots (cleaned up and diced into bite size pieces). Then minced the shallot. Then peeled and cubed up the spud into bite size pieces. Put all the stuff into individual gladware and into the fridge. Then cubed up the turkey and into a tupperware and into the fridge. Shredded up about 3 oz of the cheese. Same deal with the gladware.
Baked the puff thingies and set aside. Went to pick up the Mrs. When we got back, I sauteed the shallot in butter, added the soup with a little milk then added the cheese. When smooth added the spuds, then added the rest of the stuff. Heated through. Spooned into the puff thingies. BAM - Turkey Pot Pie in 15 minutes. Big hit. Mrs Approved.
Feel free to add/switch out veggies.
