Skinless Boneless Chicken Breast Stuffed /Spinach Ricotta

Came up with this the other day.

Chicken breast split to make pocket
Seasoned lightly garlic granular –salt-pepper
Ricotta cheese mixed with garlic granular-little
cayenne pepper –salt –pepper- lemon juice ñ tiny bit
lemon zest ñ dried sweet basil
spinach leaves fresh
Swiss cheese*
thin slice of roasted red pepper

Chicken broth
Fresh chives chopped use as garnish

Slice to make a pocket to each breast –season inside ñ out –set aside
Mix ricotta with all listed- set aside
Wash spinach leaves dry
Slice Swiss cheese thin for each breast
Slice thin roasted bell

Preheat oven 350° F.
Put together spread inside of each breast (one side with ricotta mix –followed by
followed by spinach Swiss cheese ñ bell-close pocket with toothpicks
Place in baking dish with little chicken broth not much –in oven till just cooked through.
Nice salad or my jicama julienne salad-with watermelon-with oil dressing ñ seasonings.

Notes~ ** Use any cheese in place of the Swiss.

Ricotta cheese add little egg white to hold it together better -forgot sorry

Do you have any recipes for baked chicken breast that involve ricotta?

Grits assuming U mean more recipes with Ricotta n Chicken other than one posted?

Try this one
Chicken Manicotti

1) 8 oz. pkg. manicotti shells
2 c. chicken cooked cubed or shred
2 c. ricotta cheese divided
little garlic granular to taste
Few sprinkles of crushed red pepper flakes
little lemon zest with little juice
8 ozs. spinach chopped fresh divided or more
Little accent (optional

1 jar of favorite Spaghetti sauce or homemade
Romano or Porcini grated cheese as much as u want

Cook shells according to package directions.
1 c. or more mozzarella cheese grated
Preheat oven 350° F

1st bowl -a large bowl- combine chicken- 1½ c. ricotta
cheese- 1½ c.-spinach- lemon zest- little lemon juice to taste-
garlic –salt-red crushed pepper to taste – ñ I use little *Accent (optional.

Using another bowl add the same ingredients as in 1st bowl with remaining ricotta-
Chicken ñ spinach with same seasonings to spread lightly over top all tubes

Spread 1/2 c. spaghetti sauce in a greased 13” x 9” x 2” inch baking dish.

Drain manicotti well- stuff each with about 1/4 c. manicotti-chicken mixture. Arrange
over sauce in baking dish. Pour little sauce over shells. Add rest 2nd bowl of chicken
Manicotti mix spread lightly ñ add remaining spaghetti sauce
over filled tubes with romano or proconsul grated cheese

Cover bake 25 minutes. Uncover- sprinkle mozzarella cheese over top. Bake
10 minutes longer or until mozzarella cheese is melted.

Note~* use whatever grated cheese like parmesan or mix
These are not exact measurements but close.- I don’t measure this just mix it up ñ taste it.
sometimes I add 1 egg to mixture to hold it together -below is my regular manicotti used with other dishes ..Hope this helps

Mannicotti Filling Hj's

1 small Container of Ricotta Cheese
2 lemons - a little 1/4 of rhine or the zest grated from the peel
Juice from 1 lemon only
1/2 c. of Romano cheese ...I use Cello Brand and grate
1/2 c. of fresh spinach cup up small
salt to taste *
1 egg
dash of garlic powder
1/2 cup Mozzarella
chop little fresh parsley leaves only 1/2 to palm full n add

Box of shells cook as directed n fill

Mix well altogether and stuff cooked shells or lasagna thin wraps and roll them....seal with egg yolks.

Place shells in a glass baking deep dish sprayed with oil
Little Spaghetti sauce of your choice (I make my own) but like several on the market when I am in a hurry and Emil's Vodka Sauce goes well with this. Top with Mozzarella cheese

Bake in oven 350° F. 25 to 35 minutes or Microwave half the baking time

*Note I use just a hint of cayenne pepper when adding salt -quick dash mix well.
add dash nutmeg if u want my family doesn't care for it.

Forgot can use alfredo sauce -homemade or brought for the chicken tubes..
