¾ c. Panko breadcrumbs
½ c. coconut unsweetened shredded
2 tsps. lime peel finely grated
1 tsp. gr. black pepper
2 eggs large
18 shrimp uncooked peel deveined tails on
Peanut oil for frying
Baking sheet lined with parchment paper
Mix together well the 1st group in bowl. Whisk eggs to blend in another bowl- medium size.
Add shrimp to bowl with beaten eggs- coat well. Work with 1 shrimp at a time from egg mixture into Panko mixture –coating well. Place each coated shrimp on baking sheet –When done coating chill 4 hours-covered.. Shrimp fry better when cold in hot peanut oil which gives better flavor to shrimp.
Either use skillet or deep fry to cook. Skillet oil of ¼ in. depth –medium heat. Don’t crowd shrimp when frying. Cook till golden transfer to paper towels to drain. Serve on platter with marinara sauce or a pina colada sauce. ( Used to have great col-lada sauce will look for it
