Chipotle Shrimp Bites

Source from Eat Well

1¾ lb . shrimp raw peeled deveined
1 beer your favorite
3 garlic cloves large peeled smashed
1/4 tsp. salt
3 chipotle chiles in adobo sauce seeded minced
1 T. adobo sauce from can above
1/3 cup. mayonnaise
2 T. chili sauce
2 T. red onion mince
1 tsp. orange zest
1 T. orange juice fresh
1 c. cilantros chop
36 tortilla chips large restaurant style

Garnish with lettuce finely chopped-avocado diced-chives chopped. A nice touch is diced black or green olives sliced or both is optional.

Using large deep skillet over medium heat –place in single layer of shrimp - add beer – ½ of garlic ñ salt –poach shrimp 7 ½ minutes one side, turning shrimp ñ 7 ½ minutes or just till cooked through. “Beer should just be approaching a simmer .”

Remove shrimp with slotted spoon to a bowl to cool. Now, bring beer to a boil with remaining minced garlic ñ reduce to 3 T. about 9 minutes. Skimming surface once or twice. Add chilies-adobo sauce – mayonnaise-chile sauce -red onion-orange zest with juice ñ cilantro to reduced beer - whisking to incorporate the mixture well.

Cut drained shrimp into 2 or 3 pieces each adding to beer mixture- toss to coat well.

Serve shrimp-chilies mixture top of tortilla chips with all garnishes. Serves 12

~ Note ~ Make up to 2 days ahead ñ refrigerate EXCEPT adding to tortilla chips ñ garnish. Serve hot or cold. This is a hit at parties - You can sub orange zest for lemon or lime zest

sounds like something to try. just need to wait for the gulf to clean up tad before i do though.
