Marinade~
¼ c. dry sherry
1 T. each sesame oil ñ grated ginger
2 T. soy sauce or Maggi
1 garlic clove crushed
Kabobs~
16 sea scallops
12 jumbo shrimp tails on cleaned deveined
8 each~ red ñ green bell couple jalapeños cubed seeded
12 mushrooms medium
4 skewers
Marinade with all ingredients mixed together in bowl or dish about 1 hour or longer in refrigerator-turning often. Blanche peppers cubes in chicken broth or water 1 minute. Drain.
Remove seafood from marinade thread to skewers. Place marinade in pot bring to boil –reduce to simmer 5 minutes.
Have grill medium to high…Oil the racks Cook till done –turn once-basting with marinade often.
