Prepare scallops* etc by grilling (over applewood or fruitwood etc broil-saute' etc-
Mango Salsa (can be used as dip or with fish any seafood etc.
Dice or mince desired amounts fresh tomato- mango- sweet onion- cilantro- squeeze in some fresh lime juice. Let stand room temp or in refrigerator to allow flavors to infuse.
Top scallops with salsa
Notes~Lick it up by topping first with lime-herbed butter
or
add a little heat- maybe chipotle chopped- a dash of something for sweetness ñ for balance-maybe
Little orange juice or sweet jam mixed
*Or use Shrimp instead of Scallops or mix them together
