Seafood Sausage Sandwich Grilled with Slaw

Here's another delightful tasting sandwich I came up with
Serves 2

½ lb. shrimp- about 6 or 8 shrimp
1 tsp. kosher salt ñ black pepper
2 sausages of choice cut into 3”pieces
4 green onions cut into 2“ pieces
Cherry tomatoes about 6
3 T. x virgin olive oil

3) 10” skewers
2-3 sandwich rolls**

Drizzle olive oil over shrimp with salt ñ pepper
Soak skewers in water about 20 minutes unless use steel ones.
Thread shrimp-*sausage - green onion ñ cherry tomatoes
Cook kabobs turning often till done
Place long hoggie type rolls sliced butter-flied ñ heat on grill

Arrange the slaw mix on 1 side kabobs into side ñ little coleslaw sauce
On bottom with the cooked green onions..

Cabbage Slaw Make ahead ñ chill or make while above cooking
1 c. cabbage shred
Little carrot shred

pinch of kosher salt
small pinch garlic granular
coarse black pepper to taste
dash of cayenne pepper
sour cream
mayo
lemon juice
fresh chives
Worcestershire sauce (optional

Remoulade Dressing
Mixed with little mayo –sour cream-little lemon juice ñ touch of garlic –fresh chives –quick TINY splash of Worcestershire Sauce. I just mix all this to my taste
Remove a little of the sauce to spread on bottom of **hoggies or use long thin Artisan bread.
Mix in with slaw. If too thick add little couple drops of milk or add little more sour cream

Note ~* Can grill sausage FIRST by themselves –If U think they won’t cook enough ñ shrimp will become over cooked.

Last time I made these I added some roasted green chiles with the roasted red peppers..OH Golly that was tasty..
A mistake is sometimes a great creation
