Lulu's Shrimp Poppers

Just got the recipe from my Cajun Bud today.
These are like jalapeno poppers and finger food.

Take a mini muffin pan and coat with pam or canola
Place one raw peeled shrimp (31-40 size) in each location
Crumble some crispy bacon over the shrimp
Finely chop some canned jalapenos (I think I'll roast some and then chop and add)
Finely chopped scallions or onions optional here.
Top that with some shredded cheese of your choice (pepper jack would be mine)
Sprinkle some bread crumbs on top of it all
Place in the oven on "broil" for 5 minutes but don't let the cheese burn
Remove let cool a few minutes, spoon onto a platter
"don't hurt yourself munchin' out on these goodies"

I fixed a batch of these today and, even tho my broiler went out and I had to do them
in the oven, they were danged good. I'll bet you outdoor cooking folks could figure out
a way to do these on the pits, huh???

No alterations needed to how you cooked 'em if they were cooked in a ceramic pit. If I could get the Mrs to eat shrimp your recipe would be on my to-do list. Wonder if I could sub crab meat for the shrimp? She'd go for that.

hey dave, i'd bet a dollar that crab would go very well as a sub in the recipe.

just wondering, any particular reason the missus stay away from shrimp?
