Couldn't find Paul Prudhomme's blackening spice so decided to make my own.
Blackening Spice
1 TB Sea Salt
2 TB Sweet Paprika
2 TB Granulated Onion
2 TB Granulated Garlic
1 TB Oregano
1 TB Thyme
1 tsp Cayanne Pepper
1 tsp Texas Gun Powder (Chipotle) (Sucklebusters)
Blend together in a coffee mill.

Snapper with Chipotle Cream sauce, red beans/rice, zuke boat with goat cheese and pine nuts, crab leg.

Only used 1/2 of one of the fillets.
This was the best fish the Mrs and I have ever eaten. :D Just fantastic.

Looks like fine dining - $40 in a New Orleans restaurant without cocktails and wine.
