thanks guys I have tried snapper in the past and didn't like the outcome although I do like snapper it just didn't have the same light flavor or flaky delicate texture of red fish.

Drum will work - in fact a redfish is really a red drum. You will not be able to tell the difference between a red drum and black drum in taste and texture.

Don't use a huge drum (otherwise known as a big nasty).

Any lean fish will work - bass, tilapia, catfish

I would stay away from an oily fish like macheral (sp).

What's available where you're located?

Speckled trout and whiting is worth a shot.

I live on a lake where striper fishing is king. We cook at eat striper on the half-shell often with excellent results. :)

TT - do you ever blacken the stripers?

I prefer blackened over on the half shell

I haven't myself, but have eaten it blackened. I like it both ways.

Here is some I did on the half-shell a while back...
