Busted Blackened Tilapia

This is a quick and easy recipe for Blackened Tilapia. The great thing is that even our kids asked for seconds (we did too). :wink:

5 or 6 Tilapia Fillets
Extra Virgin Olive Oil
SuckleBusters Texas Gold Dust
Lemon
Louisiana Hot Sauce (optional)

Coat the fillets with EVOO and apply a heavy dusting of Texas Gold Dust - All Purpose Seasoning. Heat a non-stick skillet on high heat and add the fillets. Turn once when you see the seasoning forming a dark crust. They cook quickly, about a minute or two on each side. Squeeze on lemon and add Louisiana Hot Sauce if you like it extra hot. Serve and enjoy! 8)

IMHO, a cast iron frying pan or skillet works best. Gotta work fast, fishies don't take but a minute or two with the iron hot as hades. :shock: :D

PS, might want to add some fresh fine ground black pepper to the dust if you like a bite. :wink:

Gator... Did you blacken this inside or outside?

When I had my first apartment, I blackened some red snapper inside and set off my smoke alarms.

Since then, I have done it outside because blackening will produce alot of smoke.

I did these inside Chuck, not much smoke. The Tilapia cook so quickly that there is not much time to get a good smoke ring. :lol:

Yessir, that is good. Cooked us up some of those a week or two ago.
I didn't get mine as blackened like yours tough. Looks great.

Tilapia is our favorite fish. Well, the kids and I!! Hubby won't touch fish.
That fish looked mighty good!! I also like the good value of Tilapia. It tastes just as good or better than orange roughy, which I also love, but is half the price!
