my Smoked Salmon

Postby Tasso-Hunter » Tue Sep 06, 2016 4:10 pm

Hi I share my personal recipe of smoked salmon. Before rubbing I usually wet the fillet with worchestershire souce.
The main ingredient of my rub is chives ( erba cipollina), the others are white pepper, salt and garlic.
I usually smoke it with apple or cherry wood.
284 F for about 1 hour and this is results...sometimes I glaze it with a honey spoon in the last minutes..delicious :laughing7:

Ooooooh yeah! Excellent!

Salmon on the grill is nice. I like mine with a lot of dill - a whole lot of dill.
