Marinated Shrimp for Frying

Postby OldUsedParts » Sun Sep 11, 2016 10:17 am

I have used this pre marinating suggestion for years and am very pleased with the taste and crispness that it provides the shrimp.

Recipe comes from Pat Huval :chef: in Henderson, Louisiana via Tony's Cookbook:
Ingredients:
1 pound fresh shrimp
1 small can of Carnation milk
2 eggs
1 tblsp Calumet baking powder
2 tblsp vinegar (I prefer to use only 1 tblsp)
1 cup flour (I use a mix of Corn Flour and Wheat Flour)
She recommends Tony's Creole Seasoning here but I use Slap Yo Mama (or what ever you like)
Directions:
Make a mixture of eggs, milk, baking powder and vinegar. Marinate shrimp for at least 1 hour in the mixture. Remove, season lightly, dip in flour and fry in 380 degree fat/oil until golden brown (no longer)
