I went to the annual fish fry for our subdivision today and, AS USUAL, the fish was Fantastic. These folks have catered it ever since we moved here in 2012 and every year it has been very very good (aka Larapin) Got brave enough to ask the folks what temp they fried their fish at and they gladly said between 350 and 375. After a bit I tried my luck again and asked if they used Peanut Oil. She told me that they use a product called Fry Oil that they get at Sam's. Well, right before I left I sawnder'd over, dropped some money in the tip jar and asked if they would give me their batter recipe She just smiled but said nothing so I left while I still could. However, I am good friends with their Daughter and Son in Law so I ain't giving up just yet.
Bump: I'm thinking this is what they use and I'm getting me some. She did mention that it was part soy and peanut oils and could stand long hot cooks at high temps.

I use only 100% peanut oil. The smoking point is 450F, so fish, french fries, etc. are safe since I cook at 350F.

No doubt that pure P.O. is the best and I'm thinking the reason they use the Fry Oil is because of cost since they cater and use a lot.

I use dripping aka lard as well for fried eggs on fried bread, I know not too healthy, but food I grew up with. Once every 3 months is ok. My deep frier I use plain ol vegetable oil.
Never had a complaint on my twice fried chips, just more please. My chicken croquettes cooked in oil are the best ever.

Since these folks "Cater" for very large events, I'm sure that Crisco or Lard would not work for them.

Maaaan I'm not sure. It comes in an 8 pound bucket, I just spoon it into my Dutch oven until I'm satisfied with the amount.

I suppose not. It is available in commerical quantities, but likely cost prohibitive......
