Brenda's Crab Cakes
The secret to better crab cakes is cook in butter.
I use claw meat because it is in big hunks, is cheaper and when sautéed in butter is delicious !

1 # claw crab meat
1 beaten egg
2 Tbsp mayo
1 Tbsp prepared mustard
1 teaspoon Worcestershire
1 teaspoon dry mustard
1 teaspoon of seafood seasoning (Old Bay)
1 teaspoon lemon juice
Hot sauce to taste
3/4 cup bread crumbs or Panko

Combine all ingredients except crab meat and bread crumbs.
Add crab meat, do not break up.
Fold in bread crumbs, gently.
Shape into desired size (usually 6-8 per #) and fry in melted butter on medium heat until lightly browned.

As for the Worcestershire, that's without a doubt a KEY ingredient :)
