Olive oil to taste
1 clove garlic, minced
1 shallot chopped
1 bay leaf
1 sprig fresh thyme or couple fresh basils
1/2 c. white wine
1 qt. heavy cream
1 lb. roasted tomatillos remove husk pureed
Salt n white pepper or black cracked to taste
Filling~
Olive oil to taste
1 lb. shrimp 24 to 26 count deviened no tails
2 garlic cloves minced
1 lb bay scallops
1 lb. chorizo sausage *notes
1 lb. crab claws
2 poblano peppers roasted deseeded
1) 16 oz. pkg. lasagna noodles
Shredded as much cheese to ur liking
Sauce~
Heat arge saute pan- add drizzle of olive oil- garlic with shallots. Saute until shallots clear,-add bay leaf n thyme or basil. Saute 10 seconds- then add wine - reduce until almost gone. Mixture will turn thick. Add cream with tomatillo puree- reduce by half. Add salt n white pepper or cracked black pepper.
Filling- Heat another pan - add drizzle of oil- add shrimp. Saute until shrimp just starts to turn pink. Add garlic -saute 20 seconds. Add scallops - season salt n pepper. Cook until shrimp -are bright pink. Remove from heat - set aside. In another pan- cook *chorizo* on medium heat until light brown. Remove meat from crab claws.
Preheat oven 350 F.
Lasagna~
Using baking pan or dish-add a ladle of sauce- a layer flat thin lasagna noodles. Place some shredded cheese -sprinkle of roasted poblanos- layer of shrimp -scallop mixture with layer of crab-ladle more sauce. Continue layering until you run out of ingredients. Top with remaining sauce- cheese n *chorizo*. Bake 45 minutes. 8 servings.
Notes~ Use gr. beef with about 1 inch pepperoni stick (remove skin- chopped up fine if u don't like chorizo
If you want a little chorizo taste instead of using pepperoni stick with beef use DRIED CHORIZO n chop fine..Works well also.
