I tried a recipe tonight that I got off of the net for Chicken Tortilla Soup and I must say it was most excellent. I thought I would share with you all...
Chicken Tortilla Soup
1¼ hours | 15 min prep
SERVES 10
* 2 teaspoons olive oil
* 1 medium onion, chopped
* 4 garlic cloves, minced
* 1 medium jalapeno pepper, chopped
* 1/2 medium green pepper
* 4 small boneless skinless chicken breasts
* 2 cups frozen corn
* 1/2 cup dry white wine or water
* 2 teaspoons cumin
* 1 teaspoon chili powder
* 1/4 teaspoon cayenne pepper
* 4 (14 ounce) cans chicken broth
* 2 (14 ounce) cans diced tomatoes
* 2 (8 ounce) cans tomato sauce
Topping
* 1 cup non-fat tortilla chips - (I sliced some corn tortillas and deep fried them. They were awesome!)
1. Sauté onion, garlic, jalapeño and green pepper with olive oil in a large pot until soft.
2. Add all the rest of the ingredients to the large pot and bring to a boil.
3. After about 15 minutes, remove the chicken breasts and shred.
4. (Two forks work well to pull the chicken apart!).
5. Return shredded chicken to the pot and simmer an additional 45 minutes.
6. Serve, topped with crushed tortilla chips if desired.

Tex, that looks fantastic. I'm always looking for something new to try and this one's going on the list. As much as I love the recipe you posted for taco soup, I bet I'll enjoy this one too. The taco soup has gone in the regular rotation, although I did make some slight modifications.

Hey Kenny - the consensus at my house is that this wins out over the taco soup. The fresh fried corn chips definitely add to the greatness! I must say that this recipe is a lot more labor intensive than the taco soup, but it is really delicious.

Tex, I'm really not concerned about labor intensive. In fact, with the taco soup recipe I add some chopped onions & peppers which adds a little labor to it. This recipe, and the taco soup one too, screams grilled corn & poblano to me. I'd be willing to bet that smoking the chicken breast would be great too. The good thing is that you can do those things while you're cooking something else on the grill and put them aside for the soup. I do like to try a recipe as is first before making any changes though.

I love a good soup. To me it is the ultimate in comfort food & a way to tell those you share it with that you care. That is a fine looking meal and the homemade corn chips to my put it over the top. Looks absolutely delicious Toby I could handle a big bowl.
Never met a cow I didn't like with a little salt and pepper.
