~Zesty Purée Dip
1 -2 garlic cloves
½ c. basil leaves fresh
½ c. mayonnaise
1 T. lemon juice fresh
Salt ñ garlic granular to taste
Add little cayenne pepper for zip (optional
Purée in a blender until smooth-cover –remove to a bowl -chill
Use with any fried food.
Notes~ add little Accent ñ onion powder for more flavor.
~Coating ñ Seasonings
¾ c. Panko breadcrumbs
¼ c. all-purpose flour
1¼ tsp. salt
4 tsp. pepper
1/8 tsp. cayenne pepper
¼ tsp. cumin powder
Mix together this group with seasonings together in pie dish.
Sprinkle tomato slices with salt. Dredge in flour alone - shake off excess.
~Tomatoes
3 lbs. sliced green tomatoes cut ½” thick
Season tomatoes lightly with salt
¾ c. all purpose flour to dredge tomatoes
~Eggwash
2 eggs mixed with little milk or sour cream or mayo or buttermilk to make egg wash
Don’t make to thin
¼ c. canola oil
12 cherry tomatoes
Dip in egg wash- coat with crumbs. Heat oil ñ fry until golden- about 3 minutes per side. Drain. Serve with cherry tomatoes ñ my zesty puréed basil mayonnaise.
