Crunchy Fried Green Tomatoes Green Chile Lime Tarter Sauce

~Green Chile ñ Lime Tartar
1 red bell pepper (about 1/4 cup for garnish
2 ¼ c. green chile peppers (about 24 Mexican green chile peppers equals 2 cups
2 c. mayonnaise
1/4 c. garlic minced
1/4 c. capers drained
3 bunches cilantro leaves only
5 limes juiced zest (may use 4 limes
Blister - peel skin from peppers. Cut peppers in half- remove seeds -veins - dice into ¼” pieces. Reserve red bell pepper ñ equal part of green chile for garnish. Place remainder of green chiles along with the rest of ingredients into food processor - pulse until blended. Chill while preparing fried green tomatoes.

~Fried Green Tomatoes
1/4 c. toasted almonds for breading
1/4 cup sesame seeds
2 c. cornflakes* or Panko or Ritz crackers
1/4 c. granulated sugar
1 ½ T. red chili flakes
1 T. salt
1 c. milk
2 eggs
1 c. cornstarch* cornmeal or flour
3 to 4 green tomatoes sliced 1/4 “ thick
6 T. clarified butter

Combine almonds-sesame seeds- corn flakes** sugar- red chili flakes n salt in food processor - pulse until coarse a-crunchy yet well blended. Empty onto baking sheet.

Whisk milk - eggs to make egg wash. Put cornstarch on flat dish. Dredge tomatoes in cornstarch until well dusted. Pass dusted tomatoes through egg wash- wetting entire tomato. Place tomato on hot ñ crunchy mixture-lightly pressing mixture on tomato with the palm of your hand.

Large cast iron skillet -sauté pan heat clarified butter to about 325° F. Lay tomatoes in hot oil - sauté about 3 minutes on each side or until golden brown.
Place 2 fried green tomatoes on a plate- top with the green chile ñ lime tartar- garnish with diced peppers (sprinkle a few around edges of the plate. Serves 6.
