1 large head escarole
4 prosciutto thin slices chopped * or use black forest ham
3 garlic cloves chopped
2 T. olive oil
2 Italian long hot peppers*seeded ñ julienned
1/2 c. bread crumbs
1/4 c. pecorino romano cheese grated
1 c. chicken broth
salt ñ pepper to taste

Clean well n rinse escarole two or three times chop in large pieces. Boil down -
5 or 6 minutes till wilted. Place olive oil in a sauté
pan ñ heat. Add chopped garlic ñ prosciutto - 2 or 3
minutes. Do not burn garlic. Add peppers - cook another
minute or so. *Add little pepper seeds for zing (optional of course!
Place escarole with all other ingredients in pan. Gradually add bread crumbs ñ grated cheese0 tossing gently until blended.
Adjust salt ñ pepper. Place in oven tested pan or dish sprinkle a little bread crumbs –place ununder a broiler 3-4 minutes. Serve hot.
Try this ..don't know what UR missing... Escarole is great with Hot German Potato salad n bacon too.
