Pancakes or Waffles made with Beer ñ Two Beer Sauces

3 c. all purpose flour
3/4 pint light beer
1/2 c. vegetable oil
2 eggs
1 T. lemon rind grated
1 tsp. lemon juice
1 tsp. vanilla extract
1 c. heavy cream
pinch of salt
1½ T. brown sugar
Sweet Orange Sauce or Beer Sauce optional serving see below

Mix flour- beer ñ oil in large bowl. Add eggs- lemon rind- juice-vanilla extract- cream, salt ñ sugar. Beat well - let stand at least 2 hours.

Pour batter on a hot- buttered waffle iron - cook until crisp- about 3 minutes.

May be served with Sweet Orange Sauce or with New England Pilgrims' Sauce.

~Sweet Orange Sauce
Makes about 1½ cups

1/4 pint light ale
1/4 pint orange juice
1 T. orange rind, grated
1/4 lb. brown sugar
2 T. butter

Combine all ingredients in a saucepan – cook-stirring - low heat until syrupy. Serve on waffles-pancakes or ice cream.

~Beer Sauce
Makes about 1½ cups

1/2 pint brown ale
1/2 lb. brown sugar

Mix beer ñ sugar - cook low heat15 minutes or until syrupy. Serve hot or cold with pancakes or waffles.
A mistake is sometimes a great creation
