Mashed Tater Chicken Wobbles Baked or Fried

Postby Hj » Mon Sep 13, 2010 4:04 pm

I Came up with these over week end n was a huge hit

Any left over mashed taters or make fresh
chicken or turkey any leftovers **
Panko breadcrumbs ~* see notes

Make balls of chicken or turkey ñ taters either by mixing mashed potatoes ñ seasoning chicken or turkey together or forming tater ball about ½ “ to 1 “ balls or bigger if U like –ñ rolling in shredded chicken or turkey- than roll into Panko breadcrumbs. Place on lined no stick foiled baking sheet if baking. Spray with little olive oil or olive oil butter spray.

Bake in oven 400 ° F. till crisp ñ brown (turn them or deep fry with really hot oil 365° F. to 375 ° F. till golden brown ñ hot inside about 1 minute or so ñ remove with slotted spoon ñ drain. Doing in batches frying –ALWAYS make sure the oil is really hot.

Notes~* Use any seasoning in the chicken lemon ñ garlic- granular -I used after shredding a roasted chicken or any baked chicken.
Little chili powder –lots of cumin powder -salt ñ little cayenne pepper.
Or chili powder-lots cumin powder –salt -green chile seasoning or
Monterey seasonings- in cheddar cheesey mashed potatoes! YUM
Have used garlic granular-basil- ñ chopped roasted peppers also mix with the chicken.

~*Sometimes I beat an egg with little mayo ñ roll finished wobble balls in the Panko.
A mistake is sometimes a great creation
