1/2 lb. yellow beans trimmed
1/2 lb. green beans trimmed
salt to taste
1/4 c. x virgin olive oil
1 T. lemon juice fresh
1 tsp. fresh basil chopped or to taste*
freshly ground black pepper
dash of red crushed pepper flakes
1/2 c. toasted pine or other nuts chopped
1/4 c. good 100 % goat cheese crumbled
Blanch trimmed beans in a pot of heavily salted water- drain ñ shock beans in cold water - set aside.
Heat skillet ñ toast pine nuts -toss often as not burn (can do this ahead ñ set aside ñ just heat them up when ready to use.
Large bowl-mix olive oil- lemon juice- red crushed pepper- basil with salt ñ freshly ground black pepper to taste. Toss beans in the dressing n sprinkle with toasted pine nuts ñ crumbled goat cheese. Toss again - serve immediately.
Note~ or use thyme or other herbs in place of basil
