Pepper Sauce Question

ok, not sure if this is in the right place or not, if not feel free to move it.

I would love to make it at home, but I have no clue as to how to do this,
is it really as simple as putting peppers and vinegar in a jar and letting them sit?

I make salsa on a very regular basis and give it out to friends and family but have never tried my hand at actual canning, so if anyone can offer advice on these 2 issues I would greatly appreciate it

Gator.....it simply says

Peppers, Vinegar and salt

I have one of those minds that automaticly says.......Ok it can't be that easy, maybe it is, but surely not

So I sought the advice of people smarter than me

But i still have 1 more question.

That link says no need to be refrigerated.......is this really true?

I think it is that simple...vinegar is a natural preservative. Wouldn't hurt to cook it, but I don't think its required.

Think about it like this: If you have a regular bottle of vinegar - whats the shelf life? Practically forever, right? All you are doing is adding some peppers, the vinegar preserves the peppers.

At worst, boil it and then store it in the fridge.

You will have better success if you:

1) cut a small X in the bottom of each pepper to allow the vinegar to penetrate.
2) Dissolve 1tbl pickling salt in 1/2 cup of water and add to your vinegar.
3) place the peppers in a large skillet with high sides and a tight fitting lid. Bring the peppers to a boil reduce heat to med low and simmer 15 min. Good luck!!
Never met a cow I didn't like with a little salt and pepper.

You said Boil....boil in the water solution, or vinegar with water and pickleing sat?

Mix together salt solution, peppers and vinegar, bring it to a LOW boil then reduce the HEAT and SIMMER
Never met a cow I didn't like with a little salt and pepper.
