½ c. vegetable oil
24 tortilla rounds about 1½ ” diameter
1/3 c. mayo
1 T. lime juice
1½ c. chicken breast cooked shredded
1 celery rib diced fine
1/4 small red onion diced fine
1 bunch green onions chopped fine ñ few stems
1/2 fresno or red bell pepper- seeded chopped fine
1 tsp. cumin powder
1 to 2 T. cilantro chopped
2 T. jalapeño’s sliced pickled chopped fine
2 T. jalapeno pickling juice
kosher salt ñ fresh ground black pepper
cilantro leaves as garnish
Heat vegetable oil small saucepan until sizzles around back of a wooden spoon or use deep fryer. Fry tortilla rounds in small batches until golden brown. Drain on paper towels sprinkle with kosher salt.
Whisk mayo ñ lime juice in bowl-set
Larger bowl add-chicken- celery- onion bell -pepper- cilantro, jalapeño’s ñ pickling juice. Add mayo/lime mix ñ combine well. Salt ñ pepper to taste.
Place mixture on top tortilla - garnish with cilantro leaves chopped
About 3½ dozen
