Boston Baked Beans
1# dry Navy Beans, soak overnight
In a Dutch oven or large Corningware combine:
4 cups of water
soaked beans
1 med. onion sliced
1/4 lb. of salt pork or raw bacon
2-3 TBSP brown sugar
1/2 cup molasses
1 tsp. salt
1/4 tsp. dry mustard
1/8 tsp. pepper.
If needed, add enough water to almost cover beans.
Cover and cook for 3 hrs. in a 350 oven.

Started by gathering up all the ingredients. Ending up using Northern Beans because that what I found in the pantry and they're a variety of Navy Beans anyway.
Got everything, good to go. I soaked the beans overnight.
The recipe calls for a 1/4# of salt pork. Eyeballed it then checked it with the scale. Close enough.
Rinsed it good, cut into smaller chunks and rendered some of the fat out.
Removed the Salt Pork and set aside. De-glazed the pan with some white wine, added a tad bit of butter and sweated the onions.
While the onions are sweating, measured out the water (not shown), molasses, brown sugar, salt and mustard powder.
Added the liquids, measured flavorings to the 25 year old crockpot (still works great) along with the drained and rinsed beans, onions and Salt Pork. Couple good cranks of fresh ground pepper and we're off to the races.
Better and cheaper than the stuff you find in the can.

Thank you so much for this recipe! I did a double batch. Used Julienned Ham in a pinch. I started off in crockpot but was taking too long. Transferred to Lodge Dutch Oven in oven for 350..raised to 400 after 1 hour. Took almost 5 hours. I had to add a lot of water so it diluted the beans, so I ended up adding more molasses & brown sugar during oven time. Added salt at the end. My guest thought it was delicious! It was even better the day after.
