That time of the year again~
6 ears corn husked remove silk
3 T. butter melted
1½ tsps. chile salt
juice of 3 limes
3 additional limes cut in wedges
Boil~ Place husked ñ removed silk corn in pot - cover with water ñ bring water to a boil. Boil 1 minute-
or
Microwave~ Cook corn on high 1 minute.
Finish corn by browning corn over a grill or gas burner (color may be splotchy.
Drizzle butter on corn ñ sprinkle with chile salt ñ lime juice. Serve with lime wedges.
Make Chile salt with some cayenne pepper-gr. chili powder-garlic granular ñ fine kosher salt to UR preference taste ñ sometimes I add a little gr. cumin powder .
Chili Salt to use any time ñ place in container with lid
7 tsps. gr. cayenne
7 tsps. gr. red chile powder (mild
3 tsps. garlic granular
2 T. salt or use (kosher salt fine grade but only about ¼ T. or
more can always add salt
½ tsp. gr. cumin powder (optional
Mix all ingredients together ñ stir in tight small jar with lid.
Use chili salt on all sorts of things ~ veggies- sprinkle on cut slices of cold jiciamca-cucumber n potato salads-sandwhiches
