Fried Chile Rolls

6 flour tortillas
2 poblano chiles diced or use roasted anaheims or (mix in some diced or strips of jalapeño’s in the rolls*
6 slices manchego cheese
6 green onions with a few stems diced
2 eggs
1 c. Panko bread crumbs
1 c. oil for frying

Lay tortilla out flat ñ add with chile- cheese ñ green onion. Roll up secure with a toothpick just to make even with tortilla. Beat eggs with a fork- dip rolls in egg – Panko bread crumbs. Fry in HOT oil until golden - drain on paper towels


Note~ Mix jalapeño seeded ñ diced fine with either poblano’s or just use jalapeño’s diced fine.


Serve on platter 3 per person with some fruit ñ romaine lettuce –gapes ñ lemon or lime wedge.

Can add some corn or black beans to this drain ñrinse both well

Make a jalapeño cream cheese dip to dip these in or eat them as is.

for the dip~ use some whipped cream cheese -little half n half-Better Than Chicken Base ( goe easy this has a salty base- garlic granular to taste ñ jalapeño seeded or serrano peppers diced into this. Use blender -had wand or food processor to mix well to consistency that you like .. this dip or sauce can be used on top of buritto's or chimi's ñ baked.
A mistake is sometimes a great creation

Yes indeedy, I've been wanting to do more TexMex/Southwest
quisine and this may be a good addition. Thanks for sharing, OUP
