Velvety Pepperoni Dip for parties

1 lb. Velveeta cheese cut into 1/2 “ cubes
1/2 red bell roasted pepper or buy them seeded chop tiny
20 pepperoni deli very thin slices diced
1 tomato small roma chopped

In micro bowl large enough to hold all ingredients- add cheese with roasted bell pepper ñ pepperoni-covered - micro 4-5 minutes or until cheese is completely melted-stir half way through.
Add tomatoes ñ continue to micro. Stir ñ if needed cook a little longer
Serve with breadsticks- pizza bread- or cut up fresh vegetables-chip-corn chips or use as a dip for wings.

Notes~ can drizzle it over hot baked potatoes- cooked pasta- or rice for a easy cheese sauce.
If it gets too thick either add some water or touch of milk
They thing about this one can add or delete any ingredients to make it their own special way of using it.
or make as much as U like -cooking less time cutting down on ingredients.

I have taken some of this mixture with some other cheeses to make it firmer n stuffed those jalapeno's or placed them in long green chilies n baked them. So many uses n ways.
