Hj's Salsa Rice

Salsa Rice
Serves 6 to 8 cups
1 T. canola oil
3 c. long grain rice rinsed*
1 onion medium chopped
5 serrano chiles or to taste stemmed seeded leave whole or can dice
2 garlic cloves chopped
3/4 c. chicken stock or water
3 c. tomato salsa warm
Preheat oven 350 ° F.
Heat oil in medium pot or skillet medium low heat. *Sauté rice-stirring constantly - till golden brown - crackling- about 5 minutes. Add onions ñ serrano’s - cook till just soft. Add garlic - sauté till can smell it about 1 to 2 minutes. Pour in hot stock or water ñ warm tomato salsa mixing well. Pour into a 4 quart baking dish or casserole. Cover with foil bake till liquid is absorbed ñ rice is tender- about 30 to 40 minutes. Stir- remove serrano chiles if desired or chop first leaving them in but seed them first- serve hot.
*Rinse rice before cooking under cold running water about 5 minutes stir with fork so it isn’t left sticky – drain well.
Note~ rinse rice first - fry it well to get the perfect texture. I make my own salsa cooking it first first
