Texas Caviar Recipe

One of our favorite "Q" joints went out of bizz last year and now we're missing not only the Ribs but the "Texas Caviar" that they made. There's lots of Recipes on the Net but I was wondering if any of you "Corny Sewers" had a tried and true mix that you would share with us? :chef:

Cowboy Caviar


1 (15oz) can black beans, rinsed
1(15oz) cab blackeyed peas
1 (17oz) can whole kernel corn, drained
2 large tomatoes,chopped
1 large avocado, diced
1/2 red onion, chopped
1/4 cup chopped fresh cilantro
Dressing:
1 Tablespoon red wine vinegar
3-4 Tablespoons lime juice
2 Tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients in bowl. Cover and chill. :texas:
Never met a cow I didn't like with a little salt and pepper.
