Pickle treats for kids of all ages

We fix these as treats for kids--big kids like them too :D

Cinnamon Pickle Sticks

1 Day 1
2 Peel about 2 gallons of large cucumbers, remove center core of seeds and cut into 4 inch sticks ( or can slice crosswise forming circles ).
3 Mix together 2 cups pickling lime and 8 1/2 cups of water. Pour over cucumbers in an enamel or stainless steel container ( pan ) and let stand overnight. ( 24 hrs. )
4 Day 2
5 Drain and rinse cucumbers.
6 In a large pot mix the following with the cucumbers : 1 cup white vinegar - 1 small bottle of red food coloring - 1 Tbls Alum - Enough water to cover cucumbers - Simmer for 2 hours, then drain and put in large container
7 While cucumbers are simmering, in another sause pot mix the following : 2 cups of white vinegar 2 cups water 10 cups of sugar 8 broken cinnamon sticks 6 oz. package of cinnamon red hots candy Bring to a boil and pour over drained cucumbers. Let stand in mixture overnight. ( 24 hrs )
8 Day 3
9 Pack pickles in Mason jars. Reheat the syrup and pour hot syrup over pickels in jars. Give hot water bath : Wipe around jars, put on lids, noy tight. Set jars in hot water and simmer 10 minutes. Take out of bath, put a cloth over jars ( you will hear popping sound ) The next morning, screw lids on tight.
