Cajun Roasted Potatoes

My daughter fixed some of these. I think they are delicious and thought some of you might like them too.

Deb's Cajun Roasted Potatoes
Cut up 3 or 4 potatoes into thumb sized pieces. Don't peel them.
Melt 1 stick margarine in large casserole in the oven. Put Dehydrated onions or 1 package of onion soup or 1/2 medium onion finely chopped. Mix in melted margarine while you cut up the potatoes. Then put potatoes in casserole dish and sprinkle with Tony Chachere's Cajun/Creole seasoning. Toss well until all potatoes are coated with margarine/seasoning.
Don't stir the potatoes but once or they will come all to pieces.

Bake uncovered at 425degrees for 45 min- 1hr. Stirring only once.

We do roasted potatoes in the smoker all the time. :D It adds that little extra flavor from the smoke. These would be good that way. :D
