CREOLE Lima BEANS
1 pound dried large Lima beans
1/2 stick butter
1 large onion, finely chopped
1 TBS fresh garlic, minced
1 fresh tomato
1 TBS sugar
1 can Rotel tomatoes
1 pound sausage of choice, sliced (I use ham hocks, smoked jowl, or smoked sausage.
salt and pepper to taste
2 cups cooked rice
Soak beans in enough water to cover, overnight; drain and rinse. Melt butter and add onion and garlic. Sauté for 10 minutes. Add fresh tomato and sugar. Sauté for 5 minutes. Add Rotel, beans, sausage and enough water to cover beans by one inch. Cook 2 hours or until tender. Add salt and pepper. Serve over rice.

Depends on the kind of beans as to how long and the weather as to refrigerate or not. Different beans take different time and methods and there are several ways to achieve the same result. Also some beans don't need soaking. I know not a good answer but here's a link I know you will like about dried beans, cook times, soak times for different beans ...................

Sorry but you lost me when I saw Lima beans. Must be a repressed childhood trauma but about the only thing I like less than shrooms are Lima beans. But other than that the recipe looks top notch.

You know lima beans when I was a kid - I hated but over the years- wow
this recipe you posted sounds good.
Here is how I do mine for a side dish.
I cook lima beans in water till tender with water. When water cooks down or lima's are tender I drain off any excessive water.
Add butter to pot -salt n pepper to taste- garlic granular to taste.
sometimes I add bacon chopped to the water while cooking than adding other seasonings as stated above.
