Chicken Tortilla Soup Hj’s
1 onion. chopped
3 cloves garlic cloves minced
1 T. olive oil
2 tsps. chili powder
1 T. cumin powder
Dash Mexican oregano powder
1-2 Roma or Plum tomatoes diced small or use*
1 – 10.5 oz. can condensed chicken broth
1 1/4 cups water
1/2 to 1 cup whole corn kernels-. cooked drain if using 4 oz. can
1- 4 oz. can chopped green chile peppers drain or use fresh
Cilantro's little chopped fine
2 boneless chicken breast halves- cooked ñ cut into bite-sized pieces
2 c. stripped tortilla chips
1/2 to 1 c. shredded Cheddar or Monterey Jack cheese
1/2 c. chopped green onions tops only
In medium stock pot- heat oil over medium heat. Sauté onion – garlic ñ peppers if using fresh in oil until soft. Stir in chili powder- cumin ñ dash of Mexican oregano- tomatoes- broth-corn- water. Bring to a boil-. simmer 5 to 10 minutes.
Make ñ add more or less of whatever you don't like
Fine tune it to your taste buds.
Stir in cilantro-chicken. Simmer for 10 minutes.
Heat the stove burner or skillet with floured tortillas that are cut into strips till lightly brown
Ladle soup into individual serving bowls- and top with strips of tortilla chips slices, cheese - chopped green onion.
~Notes * if you want more tomatoes n juice use 1/2 small can of Hunts diced petite tomatoes
