I created this last year for Football

Caliente mixture -I make my own all the time- using the caliente meat as basic for other recipes also. Freeze in separate pkgs-freeze/

Basic Mixture of Hj’s Caliente meat is~
Caliente Meat mixture of~
Ground chicken or turkey or both mixed
Red onion chop
Red – green bell - yellow Mexican peppers- little red fresco peppers
Jalapeño peppers all chopped seeded
Salt to taste
Garlic diced
Cilantros fresh diced up

If making a Mexica Chorizo spicy hot version- I add paprika ñ lots of chili powder - using about ¼ lb. gr. sirloin with chorizo- adding these ingredients from the chicken verison~ red onion down to the cilantros.

~Stuffed Mushrooms that Make YOU WANT MORE~ Caps are diced into basic caliente meat mixture above -
Preheat oven 375° F
Spray pyrex deep dish with Buttered Pam

Season mushrooms lightly -salt -pepper-garlic granular -inside n out.

Stuff larger white de-caped mushrooms or 2 medium portabello's with cilante meat – place in sprayed baking dish - surround mushrooms with* 1 poblano pepper – seeded- cut up all around the mushrooms – spray mushrooms- once in the dish with buttered Pam or Crisco Buttered Spray-~CONTINUED~

~Scampi Sauce**You can make scampi sauce or buy it I use clarified butter*-lots of garlic granular - little basil – fresh chives-squeeze of fresh lemon juice -salt to taste ñ dash of red crushed pepper-just heat up tp melt butter ñ meld flavors.

~CONTINUED TO~Add Spicy Hot Monterey Pepper Jack Cheese or any Cheddar cheese-shredded.
Drizzle little scampi butter* sauce mixture over top- bake up till last 5 minutes ñ add Panko bread crumbs on top cheese with little basil mixed on top ñ garlic granular-little scampi butter drizzled again- bake till brown ñ crisp. Oh my golly. That be good.

Bake about 18 minutes total time depending on how many ñ how much goodies piled on.
Will be bubbly..for sure Have done these in microwave too- (Half the time of baking or little more -covered

Note~ * sometimes I add some jalapeño -seeded to the poblano peppers. Buying the Monterey pepper Jack cheese or Chipotle Cheese is great. Mix little Mozzeralla or Provolone shredded in there too .

This is RICH but sooooooo deliciousssssssss! Make as appetizers-or main meal! Get the beer -wine-or maragrita

Butter ~any will do as long as it is melted with herbs -seasonings -lemon
A mistake is sometimes a great creation
