1) 14.5 ozs. fire roasted diced tomatoes undrained
1 1/2 c. V-8 or tomato juice
1 or 1 c. cucumber small peeled chopped
1/4 c. red bell pepper finely chopped
2 T. red onion finely chopped
little garlic granular to taste
2 T. cilantro fresh finely chopped or ur liking
2 tsp. white wine vinegar or lime or lemon fresh juice
Serve with warm tortillas.
Use blender or food processor-adding all ingredients. Cover pluse on n off until mixture coarsely pureed.
Cove-refrigerate 2 hours to blend flavors before serving.
