Take large round portabello's wash well -brush with olive oil inside n out of mushroom n seasoned lightly with salt -pepper n garlic granular.
Stuff mushrooms with shredded cheese from Cheddar to Mexica Blend or whatever u like -diced jalapeno's or roasted green chile's with some fresh spinach leaves -little cilantro chopped -seasoned with salt -pepper -garlic granular mixed together first before filling mushroom.
Place on a cookie sheet to bake 400 F. - 15 to 20 minutes or mushroom tender or on the grill.
Note~ sometimes I add very thin slice of tomato in the bottom of mushroom first or add a thin onion slice also or both... These make a meal with a nice grilled filet migon Steak. ENJOY
